Khao Soy Chiang Mai Recipe

Khao Soy is a delicious curry soup with wheat noodles and chicken, a typical dish from Northwest Thailand.

It is said to have originated as a dish of the Shan people of Burma. There are several recipes, some with rice noodles, but Khao Soy as found in Chiang Mai is made with wheat noodles.

Chiang Mai Khao Soy Recipe

Khao Soy is a classic Northern Thai soup that is rich, creamy, and full of flavor. It combines tender chicken in a coconut curry broth with boiled and fried noodles.

Materials

Ingredients for Khao Soy

  • 500g fresh yellow Chinese egg noodles
  • 1 good handful of fresh coriander leaves.
  • 2 tbsp chopped coriander leaves .
  • 2 cloves of garlic to crush.
  • 2 onions , cut into strips
  • 50 cl. water
  • 40 cl. coconut milk
  • 8 chicken sleeves Khao Soy is traditionally served with chicken sleeves, usually 2 per bowl but you can replace the sleeves with 500g of tofu, beef, pork...
  • 1/2 tsp turmeric.
  • 3 tbsp red curry paste. Be careful, this paste, depending on the brand, is sometimes very spicy. Reduce the dose if you have trouble with spices.
  • 1 tbsp soy sauce.
  • 3 tbsp fish sauce.
  • 2 tbsp palm sugar.
  • 2 tbsp lime juice.
  • 1 or 2 chopped red chilies if you like spicy food.

Instructions

Preparation of Khao Soy

  • 1 – Take a small portion of the noodles (1/5th) and fry them in several batches, they must be completely crispy, then drain them on absorbent paper.
  • 2 – Fry the onions until golden and crispy then place them on the absorbent paper.
  • 3 – Fry the curry paste, garlic and turmeric in the wok until the aromas come out then add the water and coconut milk.
  • 4 – Heat until boiling, then reduce heat and simmer for 2 minutes, stirring.
  • 5 – Add the chicken sleeves and cook for 5 minutes, stirring constantly.
  • 6 – Add the fish sauce, soy sauce, palm sugar and lemon juice.
  • 7 – When the sugar has dissolved, add the chopped coriander.
  • 8 – Put the remaining yellow noodles in a pan of boiling water for a few seconds then separate them with a fork before draining them.
  • 9 – Divide the noodles into four bowls then add the mixture with the chicken, coconut milk, etc.
  • 10 – Just before serving, garnish the bowls with the fried noodles, fried onion and coriander.

Notes

Khao Soy is often served with a plate of pickled vegetables, fresh onion slices and lime (as in the photo), this is optional but it's a good idea, as these are healthy ingredients!
